BEETS


Detroit Dark Red Beet

The beet, sugar beet, a biennial Eurasian plant (Beta vulgaris) grown for its edible roots and leaves. The enlarged root of this plant are eaten as a vegetable, typically having a reddish flesh. The beet, biennial or annual root vegetable, of the family Chenopodiaceae (goosefoot family).

The word beet often refers to the taproots of some plants, some of which are eaten as root vegetables, and some varieties are used as a source of sugar.

The beet (Beta vulgaris) has been grown since before Christian times. Its numerous varieties are the red, or garden, beet, the sugar beet and Swiss chard. Both the roots and the foliage of the red beet are edible, as is the foliage of Swiss chard and similar varieties. The biennial beet is often used in crop rotation program. The leaves of the sugar beet and several other varieties is also used as animal feed. The sugar beet, grown commercially throughout the temperate zone, provides about one third of the world's commercial sugar production.

It is the root that comes to mind when you talk about beets, the leaves, usually known as beet greens are also used. Chard is basically a beet which has been grown for the leaves instead of the roots.

Beets are classified in the division Magnoliophyta, class Magnoliopsida, order Caryophyllales, family Chenopodiaceae.

The roots of beets contain good amounts of vitamin C , while the tops are a good source of vitamin A. Beets are also high in folate, and soluble and insoluble fiber and several antioxidants.

Some common pests of the beet are:

  • beet armyworm--An armyworm that feeds primarily on the foliage of alfalfa, beets, and other crops. moth larva that eats foliage of beets and vegetables.
  • beet leafhopper--A small insect that transmits a destructive viral disease to plants, especially sugar beets, in the United States.
