CHERVIL


Garden Chervil

Chervil a member of the parsley family. It is sweet and aromatic.

Wester Europe lays claim to its most used location. The plant looks like carrot tops and perfers cool, moist and shaded location or part shade. Does not like to be transplanted so you will need to plant from seed where you want to grow the plant, will grow well in containers though. Chervil will lose its flavor when starts to turn purple so use when leaves are green.

The plant has been used for thousands of years going back to the greeks using a combo of chervil, dandelion and watercress to fight a deficiency of nutrients. Thought with the vitamins and minerals in these plants would keep body healthy.

Sluggish digestion can be solved by brewing a tea of chervil. Also linked to Easter because of its similarity to myrrh(a gift from the three wise men to baby Jesus)

It is considered by the French to be one of the "fine herbes", a staple of classic French cooking. It is a new comer to American cooking but you will find if you use it fresh it will be a pleasant surprise.

I have found three types of chervil

  • chervil Anthriscus cerefolium(Meaning: Waxy leaves) A herb that grows to 12-18 inches(30-45 cm) mainly in zones 3a to 8b in part shade and in mild acid soil. ..find your zone...

    The plant is grown mainly for its foliage which aromatic, in mid summer will have a white bloom.

    Propagation from seed outdoors in the fall, seeds can be stored.

  • Purple-Leaved Cow Parsley, Wild Chervil, 'Ravenswing' (Anthriscus sylvestris)Meaning: Of the woods, growing wild

    A herb growing in zones 7b to 10b that may grow to height of 18-48 inches(45-120 cm) in part shade. ..find your zone...

    Will produce a white bloom in mid spring to early summer with leaves that are a bronze green and aromatic. It is attractive to butterflies, bees and birds.
