Chives are part of the onion family, the family that produces the beautiful lily. The
tube shaped, long leaves are the part of the plant that is used with qualities like the onion
except less potent. They are good sources of Vitamins A and C. Originated possibly in
Asia.
The chives set themselves apart from the rest of their family with their leaves that
are hollow tapered tubes with a sharp point and usually around 12 inches tall.
The Rumanian Gypsies used chives in part with their rituals of fortune telling.
Chives were also believed, when hung in dried bunches in and around the house
drove away evil and diseases.
The sulfur compound in the onion family, including chives, have found by sciencists to be
slightly beneficial for the digestive system, respiratory system and for blood circulation.
In mild climates can be grown as a perennial. They need full sun in well drained soil. Their
plants will also serve as a beautiful flower in any garden. If you want to grow these plants
for kitchen use add to the borders, rock gardens or even that herb garden and then you will
have plenty.
Chives make a good companion plant using them around roses to protect against
black spot and Japanese beetles.
The Chinese over 5000 years ago was using chives in their recipes. The French use it as
one of their fine herbes. It is a diversified herb one you can use in dips, tossed into
salads, butters and spreads. Take vinegar and add the blossoms to flavor it and add a soft color to the vinegar.
