The Tearless Onion

Tearless onion is for anyone who has cut up a onion and had to shy away from the task because they were so teary-eyed that they could not go on, there is good news on the horizon. Someone has developed an onion that will not bring tears to your eyes.

As far as I can tell it all started with Japanese scientists in 2002 when they found a gene that was the varmit for all those tears. Then they claimed that when that gene was removed it would also make a more tasteful, healthful vegetable.

Now, today-2008, New Zealand and Japanese researchers have created a tear free onion. This discovery will, I hope, change everyone's outlook on adding onion to their menus. Even with the finding, there will probably not be any of these tear free onions for quite a few years yet.

Using a gene-silencing technology the scientists injected DNA into the onions. This technique sets in motion a move to turn off the gene that produces the tears producing enzyme. Now try to slice that onion and wha-la no tears.

They claim that by directing the compounds to the right place it would definitely enhance flavor and health benefits. Hope is that the new onions would increase positively its reputation to sweet, aromatic and tasteful vegetable.

Myself, I have to say I love onions the way they are right now. If this does make them better. I may be able to eat them like an apple. Yum!
